Hello my Veganuary gang. Here we are on day 2, how’s it going for you? May I present to you my Veganuary Quick Start: A.K.A How to eat vegan when the cupboards are bare.

If you had anything like a New Years Eve celebration then you may have woken up this morning wondering how on earth you’re going to get through the 1st day back at work never mind tackle this whole Veganuary thing. Fear not, I’ve been there and I’ve got you covered.

If you’ve signed up for your daily Veganuary email then today you will have received your handy list of accidentally vegan products widely available in most supermarkets, many of which are likely lurking in your kitchen too. If you haven’t signed up then now is a great time to do so right here, go ahead, I’ll wait. 

So you’re armed with your list, now what? Well, I’ve put together this handy video guide just for you. It’s chock full of quick and easy meal ideas using basic ingredients. These recipes are made from the kinds of things you might have leftover at the end of the week. You’ll also find this really helps if you’ve only just heard about Veganuary and want to join in. Perhaps you forgot about it during the festivities and now feel unprepared to give it a try.

But I’m already vegan I hear you cry! That’s wonderful, you’re my hero. I also reckon you’ll find something here that may come in useful the next time you feel lazy, tired, skint or find yourself round at your Nan’s house and she says she doesn’t have any vegan food in. The most important thing about Veganuary is the intention. If you are fully committed, 100% to giving it a go then don’t let the meagre contents of your fridge phase you. You already eat many more vegan foods than you realise, the trick is just getting used to swapping out those pesky non-vegan items. You’ll be a pro in no time.

I challenge ANYONE not to find something vegan to eat in their kitchen in the first few days of January. Will it be the best meal you’ve ever eaten? Unlikely. Will it win Michelin stars? Definitely not. Will it be an easy on the eye, Insta worthy creation? Who cares? The point is it’ll get you through and get you going in the right direction.

Once you decide to get started and hit the shops to stock up there will be no stopping you. Until then keep it easy, keep it basic and get your Veganuary on.
